The malt provides an earthy simplicity of Old World flavors, balanced with hoppy flavors from Simcoe, Palisade, and Loral in the kettle and a Loral and Citra dry hop. Fermented with Trappist yeast. Aged 6 months in Owen Roe’s neutral French oak barrels, previously used for Chardonnay. Featuring subtle saison notes, flavors of Chardonnay, honeysuckle, apples, lemongrass, and oak.
Small Batch Series: Our 30-barrel production brewhouse was installed for our opening in April 2013. A 5-barrel pilot brewhouse was installed as part of our production expansion in 2016. We'll be brewing small batches on the pilot throughout 2017--be on the lookout for these limited brews in the Taproom and at select locations across Washington.
